Cajun Spice
I am a big promoter of fresh spices. I used to use a store bought blend, but they can have artificial preservatives, unknown additives and gluten. I created this blend to avoid all that at haven’t looked back. For those with gluten sensitivities, there is no reason to go without your favorite seasoning. You can recreate closely whatever blends you find in a store. Cajun seasoning gets used almost daily in our house. Potatoes, chicken, scallops, shrimp and steaks all are great with this seasoning.
Ingredients :
2 tsp smoked hot paprika
2 tsp salt
1 tsp dried thyme
1 tsp oregano
1 tsp ground pepper (I use tellicherry as it is more flavorful, but feel free to use black or white pepper)
1 tsp garlic powder
1 tsp chili powder
1 tsp onion powder
Directions :
Mix all ingredients together and store in air tight container. Should last for several uses and several months. Some of you might think there needs to be cayenne, and feel free to add 1/4 tsp if you want, but there is enough heat from the hot paprika and chili powder. The goal here is to be flavorful, without the heat overpowering the taste, so trust me it doesn’t need cayenne.
